Loaded Cauliflower Mash

Ingredients

  • 1 large head of cauliflower, cut into florets (approx. 1.5 lbs)
  • 3 tbsp butter, room temperature
  • 1/4 cup sour cream (full fat)
  • 1/2 cup sharp cheddar cheese, shredded (plus extra for topping)
  • 4 slices bacon, cooked crisp and crumbled
  • 2 tbsp fresh chives or green onions, thinly sliced
  • 1/4 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  1. Steam the Cauliflower: Place florets in a steamer basket over boiling water. Cover and steam for 10–12 minutes until very tender (fork-tender).
  2. Note: Avoid boiling directly in water, as cauliflower absorbs liquid easily and can become "soupy."
  3. Dry Thoroughly: This is the most important step. Drain the cauliflower and let it sit in the colander for 2 minutes. Pat it dry with paper towels or a clean kitchen towel to remove excess moisture.
  4. Blend: Transfer the hot cauliflower to a food processor. Add the butter, sour cream, garlic powder, salt, and pepper. Pulse until smooth and creamy.
  5. Load It Up: Transfer the mash to a bowl. Fold in most of the cheddar cheese, bacon bits, and chives.
  6. Final Touch: Top with the remaining cheese and bacon. If you want it extra decadent, you can place it in an oven-safe dish and broil for 2–3 minutes until the cheese bubbles.
