Chorizo and Halloumi Pasta

We didn't like this one. The sauce was too watery and didn't stick properly to the pasta.

Ingredients

  • 8.8 oz (250 g) pasta
  • 1 tablespoon olive oil
  • ½ lb (250 g) chorizo sausage, sliced
  • 1 large shallot, finely chopped
  • 1 large red pointed pepper, sliced
  • 2 large garlic cloves
  • ½ lb (225 g) halloumi cheese, cut into 1-inch cubes
  • ½ tablespoon dried oregano
  • 2 teaspoons smoked paprika
  • 1 cup (200 ml) tomato sauce (passata)
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Bring a large pot of water to a boil, salt it and cook the pasta al dente according to the instructions on the package. Reserve 1-2 cups of pasta water before draining.
  2. Meanwhile, heat the olive oil in a large, deep pan or Dutch oven and cook the chorizo for 2-3 minutes over medium heat until slightly browned.
  3. Add the shallot and sliced red pepper and continue to cook for 2-3 minutes, stirring occasionally.
  4. Stir in the garlic and cook for another minute, then add the halloumi, oregano and smoked paprika.
  5. Cook for a minute, stirring from time to time, then add the tomato sauce and stir to combine.
  6. Add 1 cup of the reserved pasta water and allow the sauce to bubble for 2-3 minutes.
  7. Add the cooked pasta to the pan and toss well to cover in sauce.
  8. Stir in the fresh parsley, adjust the seasoning and serve immediately.
