Ingredients:
For the cake:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 120g unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 2 cups fresh blackberries
For the streusel topping:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 60g unsalted butter, at room temperature
- 1/2 cup chopped pecans
Directions:
- Preheat your oven to 350°F (180°C) and grease a 9-inch square baking dish with butter or cooking spray.
- In a medium mixing bowl, whisk together the flour, baking powder, and salt.
- In a separate large mixing bowl, beat the butter until creamy. Gradually add the sugar, beating until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, until everything is well combined.
- Gently fold in the blackberries.
- Pour the batter into the prepared baking dish.
- For the streusel topping:
- In a small mixing bowl, whisk together the flour, brown sugar, and cinnamon.
- Cut in the butter with a pastry blender or two knives until the mixture resembles coarse crumbs.
- Stir in the chopped pecans.
- Sprinkle the streusel mixture evenly over the top of the cake batter.
- Bake for 50-55 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the baking dish for 10-15 minutes before serving.
